Beach Berry Salad
I’m literally only naming this that because I can imagine eating it on a beach during the summer lol. But this fresh fruit, cheese and walnut salad was a hit during Easter and will be on repeat for me in the warmer months.
YOU’LL NEED:
SALAD
1 large container washed baby spinach
3 clementine oranges (peeled and separated)
3/4 cup fresh raspberries
3/4 cup fresh blackberries
1/3 cup chopped walnuts
1/4 cup Feta cheese crumbles
DRESSING
3/4 cup orange juice
2 Tablespoons olive oil
1 1/2 Tablespoons balsamic vinegar
1/3 cup honey
HOW TO:
1. Mix dressing ingredients in dressing container well, then refrigerate for 1-2 hours before serving.
2. Combine all salad ingredients in a large bowl. Drizzle dressing when ready to eat!
