Fall in a Bowl
It’s fall! In a bowl! Easy, healthy and flavorful dinner idea to try ASAP!
YOU’LL NEED:
1 cup uncooked tricolor quinoa
1 medium butternut squash peeled and diced
1/2 onion diced
5 chicken sausage links, chopped
4 large handfuls of chopped kale
1 teaspoon minced garlic
1/2 cup dried cranberries
4 ounces crumbled goat cheese
HOW TO:
1. Preheat oven to 425. Place butternut squash on baking sheet and drizzle olive oil. Toss to combine. Season with salt and pepper. Bake for 25 mins.
2. Meanwhile, place quinoa and 2 cups of water in a medium pot and bring to a boil. Reduce heat, cover, and let simmer for 18-20 minutes.
3. While quinoa and squash are cooking, add olive oil to a pan over medium heat. Add onion and chicken sausage and cook until onion begins to soften, about 5-7 minutes.
4. Then add the kale and garlic and cook until kale is wilted, about 4-5 minutes.
5. Once all ingredients are cooked, add to a large bowl to serve. Optional - drizzle apple cider vinegar and honey overtop and toss well as a “dressing”!
6. Garnish with your dried cranberries and goat cheese and enjoy!!
This makes about 2-3 servings.
