Greek Yogurt Chicken
I think I made this recipe 3x a week in college. Partially because it’s so easy and partially because I didn’t know how to make anything else. I taught myself once on Pinterest and that was that. But I dusted this off recently and remembered how delish it is! Perfect for easy, healthy, weeknight dinners.
YOU’LL NEED:
2 boneless skinless chicken breasts
3/4 cup plain nonfat Greek yogurt
1/2 cup parmesan cheese
2 cloves minced garlic
1/2 tsp lemon zest
1.5 tsp Italian seasoning
Basil to garnish
HOW TO:
1. Preheat oven to 375. Place the chicken in a prepared baking dish. Season with salt and pepper to taste.
2. Then mix together the yogurt, Parmesan, garlic, lemon zest & Italian seasoning. Pour over the chicken and make sure the chicken is completely coated.
3. Bake for 35-45 minutes until chicken is cooked through. Garnish with basil and enjoy dat juicy, flavorful chicken with whatever sides ya want.
