Avocado Egg Salad
An easy lunch recipe you can probably make with stuff in your fridge right now Skinny Avocado Egg Salad!
YOU’LL NEED:
1 medium avocado
3 hard boiled eggs
2 tbsp plain non fat Greek yogurt
1 tsp lemon juice
1 tbsp cilantro
Salt and pepper to taste
HOW TO:
1. Mash avocado in a medium bowl until mostly smooth. Then peel and finely dice egg. Add to avocado, along with remaining ingredients.
2. Combine well & refrigerate 15-30 minutes before eating. Enjoy!
