This 5 minute healthy, vegan dip is going to be your new crowd please for 4th of July BBQs, summer cook outs and backyard hangs. But no dip is completely without the perfect dipping cracker and this one pairs perfectly with the new Cauliflower Snacking Crackers.
YOU’LL NEED:
1/2 cup diced red onion
15 oz can of corn
15 oz can of black beans
15 oz can of black eyed peas
15 oz can of fire roasted tomatoes
1 cup diced bell peppers
1.5 cubed avocados
1/4 cup chopped cilantro
2 tbsp lime juice
1/2 tbsp honey
1 tbsp olive oil
1/4 tsp salt
1/4 tsp cumin
1/4 tsp garlic powder
From The Ground Up Cauliflower Snacking Crackers in sea salt
HOW TO:
1. Open canned foods and drain. Combine all ingredients except for the lime juice, honey, olive oil & seasonings into a large serving bowl.
2. Whisk the remaining ingredients together in a separate bowl. Then pour over the large bowl of ingredients and lightly combine well.
3. Serve with your delicious cauliflower crackers for a veggie-packed snack!
