Gluten Free Red Velvet Crinkle Cookies
My favorite Christmas cookie is hands down a Crinkle. These Gluten Free Red Velvet versions are a delicious lightened up twist on my favorite. Save this recipe for your holiday sweet tooth!
YOU’LL NEED:
1 2/3 cups gluten free flour blend
1/3 cup unsweetened cocoa powder
1.5 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar or alternative
2 eggs
1.5 tsp red food color
1 tsp vanilla extract
1 cup powdered sugar or alternative
HOW TO:
1. In a medium mixing bowl, whisk together gluten free flour blend, cocoa powder, baking powder, and salt.
2. In a large mixing bowl, beat together butter and granulated sugar until light and fluffy. Add eggs, food color and vanilla and beat until completely combined.
3. Beat in half the flour mixture, on low speed, until combined. Add in the remaining flour mixture and continue beating until combined. Cover the bowl with plastic wrap and refrigerate for at least 2 hours.
4. When you're ready to bake the cookies, preheat oven to 350° F. Line baking pans with parchment paper. Place the powdered sugar in a small bowl. Roll the dough into 1-inch balls, then roll the dough balls in the powdered sugar and coat completely. Lightly flatten. Place on the pans 2-inches apart.
5. Bake for 10-12 minutes until the edges are set. Allow the cookies to rest on the hot baking pans for 2 minutes, then transfer to a wire rack to cool completely.
This makes about 2 dozen cookies!
