Toddler Sneaky Veggie Muffins
I’ve been making these Chocolate Zucchini Mini Muffins on repeat and love that we have an easy treat prepped that also sneaks in a serving of his greens! No kids? No prob - I eat them just as often as my lil dude!
YOU’LL NEED:
1 box @simplemills chocolate cake/muffin mix
1 large or 2 small zucchini
Cheese cloth
2 tbsp vanilla
2 eggs
3/4 cup plain Greek yogurt
HOW TO:
1. Preheat oven and muffin tin according to instructions on box (I did 350). Then grate your zucchini over cheese cloth until you have 2 full cups worth.
2. Ring out zucchini in cheese cloth over your sink until all excess moisture is removed. Important!
3. Add all ingredients to a mixing bowl and beat until smooth batter-like consistency forms (add a small amount of avocado or vegetable oil if it seems dry)
4. Fill your sprayed muffin tins with batter 3/4 the way full and bake for 15-18 minutes or until a toothpick comes out clean.
Recipe makes about 32 mini muffins. These last about 3 days or freeze for longer!
