Cowboy Queso

Wrapping up the year with one last party recipe and it’s an easy, cheesy one! This Cowboy Queso was such a hit over Christmas and is perfect for any NYE gatherings.

YOU’LL NEED:⁣
1/2 lb chorizo sausage (casing removed)⁣
8 oz Velveeta cheese⁣
8 oz shredded cheddar cheese⁣
4 oz cream cheese⁣
One 12 oz can evaporated milk⁣
1 can rotel drained⁣
1 can black beans drained⁣
1 can corn drained⁣
One 4 oz can green chilies chopped⁣
The juice from one lime⁣
Chopped cilantro and diced avocado for garnish optional⁣
Tortilla chips for serving⁣

HOW TO:⁣
1. In a large skillet over medium heat, add the sausage and cook, breaking up into small pieces.⁣

2. Add the velveeta, shredded cheese, cream cheese, and evaporated milk and stir until all the cheese is completely melted.⁣

3. Stir in the rotel, black beans, corn, and chopped green chilies and allow to cook 3-4 minutes, or until everything is heated through.⁣

4. Remove from heat, stir in the lime juice, then garnish with chopped cilantro and avocado. Serve warm with tortilla chips.⁣

FYI this makes a BIG batch (about 20 servings), so just cut it in half if your gathering is smaller! ⁣
