Cowboy Queso
Wrapping up the year with one last party recipe and it’s an easy, cheesy one! This Cowboy Queso was such a hit over Christmas and is perfect for any NYE gatherings.
YOU’LL NEED:
1/2 lb chorizo sausage (casing removed)
8 oz Velveeta cheese
8 oz shredded cheddar cheese
4 oz cream cheese
One 12 oz can evaporated milk
1 can rotel drained
1 can black beans drained
1 can corn drained
One 4 oz can green chilies chopped
The juice from one lime
Chopped cilantro and diced avocado for garnish optional
Tortilla chips for serving
HOW TO:
1. In a large skillet over medium heat, add the sausage and cook, breaking up into small pieces.
2. Add the velveeta, shredded cheese, cream cheese, and evaporated milk and stir until all the cheese is completely melted.
3. Stir in the rotel, black beans, corn, and chopped green chilies and allow to cook 3-4 minutes, or until everything is heated through.
4. Remove from heat, stir in the lime juice, then garnish with chopped cilantro and avocado. Serve warm with tortilla chips.
FYI this makes a BIG batch (about 20 servings), so just cut it in half if your gathering is smaller!
