Almond Flour Bagels

Starting Monday strong with some insanely yummy low carb bagels. These are easy to make & so good. Originally found on @delish! This recipe makes 6-7 large bagels⁣

YOU’LL NEED:⁣
2 cups almond flour (I use @bobsredmill)⁣
1 tbsp baking powder⁣
3 cups shredded fat free mozzarella⁣
2 oz light cream cheese (I used chive flavor)⁣
3 large eggs⁣
3 tbsp everything bagel seasoning (skip if you want plain or sweet bagels)⁣

HOW TO:⁣
1. Preheat oven to 400, then line 2 baking sheets with parchment paper. In a large bowl, whisk the almond flour with the baking powder.⁣

2. In a microwave safe bowl, combine the mozzarella cheese and cream cheese. Microwave, stirring every 30 seconds (this is important!), until the cheese is melted and combined, about 2 minutes total.⁣

3. Scrape the cheese mixture into your mixer’s bowl with the almond flour mixture and add the two eggs. Mix until well combined. It will end up as a big dough ball.⁣

4. Divide the dough into 7 equal bagel portions. Roll each portion into a long line, then form a circle and press at the ends to conjoin and make a bagel shape. Arrange bagels on prepared baking sheets.⁣

5. Brush the top of each bagel with 1 beaten egg and sprinkle with everything bagel seasoning or seasoning of your choice.⁣

6. Bake on the middle rack for 20 to 24 minutes or until golden brown. Let cool 10 minutes before serving. Enjoy!
