Cinnamon Banana Bread

I think I have more banana bread recipes on my page than anything else. But hey, I’m nothing if not basic. This is the simplest one yet - 1 kind of flour VS multiple & pretty minimal ingredients. It’s an adaptation of one from @detoxinista and I’m very into it.


YOU’LL NEED:
3 black bananas⁣
3/4 cup coconut flour⁣
5 large eggs (yes, really)⁣
1/3 cup sugar or sub (I used erythritol)⁣
1 tsp ground cinnamon⁣
1 tsp baking soda⁣
1 tsp baking powder⁣
1/4 tsp sea salt⁣
1 tsp vanilla extract⁣

HOW TO:⁣
1. Preheat the oven to 350 and line a 9-inch by 5-inch loaf pan with parchment paper. In a large bowl, mash the bananas with a fork or beaters.⁣

2. Add in the coconut flour, eggs, coconut sugar, cinnamon, baking soda, baking powder, salt, and vanilla. Whisk or stir until smooth.⁣

3. Pour the batter into the lined loaf pan and bake for about 50 inutes (check with a tooth pick). Then melt a spoonful of butter (or butter alt) and whisk in another dash of cinnamon. Brush on top of loaf while hot.⁣

4. Let loaf cool completely before slicing. Keep in fridge to stay freshest! You can input all ingredients into MFP or Lose It and divide by 10 (slices) for nutrition facts.⁣
