Cinnamon Banana Bread
I think I have more banana bread recipes on my page than anything else. But hey, I’m nothing if not basic. This is the simplest one yet - 1 kind of flour VS multiple & pretty minimal ingredients. It’s an adaptation of one from @detoxinista and I’m very into it.
YOU’LL NEED:
3 black bananas
3/4 cup coconut flour
5 large eggs (yes, really)
1/3 cup sugar or sub (I used erythritol)
1 tsp ground cinnamon
1 tsp baking soda
1 tsp baking powder
1/4 tsp sea salt
1 tsp vanilla extract
HOW TO:
1. Preheat the oven to 350 and line a 9-inch by 5-inch loaf pan with parchment paper. In a large bowl, mash the bananas with a fork or beaters.
2. Add in the coconut flour, eggs, coconut sugar, cinnamon, baking soda, baking powder, salt, and vanilla. Whisk or stir until smooth.
3. Pour the batter into the lined loaf pan and bake for about 50 inutes (check with a tooth pick). Then melt a spoonful of butter (or butter alt) and whisk in another dash of cinnamon. Brush on top of loaf while hot.
4. Let loaf cool completely before slicing. Keep in fridge to stay freshest! You can input all ingredients into MFP or Lose It and divide by 10 (slices) for nutrition facts.
