Healthy Blender Muffins
These easy babies are made in the blender, minimal ingredient, gluten & dairy free (depending on your choc chips) and oh so delicious. Meal prep em for the week! The below recipe makes 8 total.
YOU’LL NEED:
2 bananas
2 cups almond flour
1/2 cup dark mini choc chips
2 large eggs
3/4 tsp vanilla extract
3/4 tsp cinnamon
3/4 tsp baking soda
1/2 tsp baking powder
Pinch of salt
Large blender (or food processor)
HOW TO:
1. Preheat oven to 350 and line a muffin tin with paper cups or spray.
2. Add all ingredients to blender except choc chips and blend until smooth. Slowly stir in choc chips.
3. Using an ice cream scooper, divide mix into tin evenly. Top with extra chocolate chips and cinnamon. Bake for 25 minutes (use toothpick test to make sure they baked!).
