Mug Cake Breakfast Sandwich

90 Sec Mug Cake Breakfast Sammy. This microwave hack is all the rage on the gram & now I know why. Easy, fast and filling. I used my “cake” as breakfast sandwich bread but you can really do anything with this! Get creative. This is adapted from a recipe on @thekitchn.⁣

YOU’LL NEED:⁣
1 egg⁣
1 tbsp milk⁣
1 tbsp olive oil⁣
1 tbsp coconut flour⁣
1 tbsp almond flour⁣
1/4 tsp baking powder⁣
1/2 tsp salt⁣
1/4 cup grated cheese of choice⁣
Optional: 1/4 tsp onion powder (for savory cake)⁣

HOW TO:
1. Whisk all ingredients except cheese together in a small bowl. Once combined, add in cheese.⁣

2. Pour into a tall mug. Microwave for 1:30. Then flip onto a cutting board or plate. Cut in half lengthwise for your two cake halves.⁣

3. Use to make whatever you want! I used mine as breakfast sandwich buns & added @themeatlessfarm sausage, 1 slice of Havarti, spinach & 1/4 avocado. You do you!⁣
