Mug Cake Breakfast Sandwich
90 Sec Mug Cake Breakfast Sammy. This microwave hack is all the rage on the gram & now I know why. Easy, fast and filling. I used my “cake” as breakfast sandwich bread but you can really do anything with this! Get creative. This is adapted from a recipe on @thekitchn.
YOU’LL NEED:
1 egg
1 tbsp milk
1 tbsp olive oil
1 tbsp coconut flour
1 tbsp almond flour
1/4 tsp baking powder
1/2 tsp salt
1/4 cup grated cheese of choice
Optional: 1/4 tsp onion powder (for savory cake)
HOW TO:
1. Whisk all ingredients except cheese together in a small bowl. Once combined, add in cheese.
2. Pour into a tall mug. Microwave for 1:30. Then flip onto a cutting board or plate. Cut in half lengthwise for your two cake halves.
3. Use to make whatever you want! I used mine as breakfast sandwich buns & added @themeatlessfarm sausage, 1 slice of Havarti, spinach & 1/4 avocado. You do you!
