Eggy Avocado Cups
I miss going to brunch so much. Trying to make the most of it at home with these Eggy Avocado Cups. Now all I need is for someone to charge me $10 for a mimosa (OJ on the side).
YOU’LL NEED:
1 large avocado
1 large egg
Salt pepper & herb garnish of choice
1/4 cup low fat mozzarella
Optional extra toppings: bacon, bell pepper, salsa, etc.
HOW TO:
1. Preheat oven to 400. Halve avocado length wise and remove pit. Then scoop a deep hole out in each half for your egg to be in.
2. Crack your egg into a small bowl. Pour half into one avocado half & half into the other. One avocado will have the yolk & one will be egg-whites only.
3. Sprinkle salt and pepper on each, then place in oven on a small baking tray for 7 minutes. Pull out and top with cheese & extra toppings.
4. You’ll put it back in to finish cooking for 5-10 minutes depending on your egg preference. I like hard boiled so I did another 10 minutes. For softer boil, only 5-6 more minutes. Garnish with herbs (grew these myself!)
Done! And almost as fancy as a brunch restaurant.
