Chicken & Butternut Squash Mac N Cheese

This Healthy Butternut Squash Mac N Cheese is protein packed, super filling & low in carbs. Perfect when you wanna hit those goals but are craving a bowl of comfort food!
YOU’LL NEED:
1 pound shredded and cooked chicken breast
4 cups butternut squash (can buy pre-cut)
1/2 cup parmesan cheese
3/4 cup shredded sharp cheddar cheese
Optional goat cheese to top
1 tbsp minced garlic
2 tbsp whipped cream cheese
2 tbsp plain Greek yogurt
Option seasonings (Italian, salt, pepper)
HOW TO:
1. Sauté butternut squash over medium heat in an oiled oven-safe pan for 10 minutes or until cooked through
2. Add all other ingredients (chicken last) and combine thoroughly. Stir continuously until cheese is fully melted.
3. Top with a little more cheese, then put in oven with Broiler on for 5 minutes or until bubbling.
Serve hot and enjoy! Makes 2-3 servings.
