No Crockpot Easy Healthy Chili

This is my go to combo when I want a chili and don’t have hours to wait for it in a crockpot.⁣

Packed with protein & oh so yummy.

YOU’LL NEED:⁣
2 teaspoons olive oil⁣
1/2 a white onion, diced⁣
3 garlic cloves, minced⁣
1 medium red bell pepper, chopped⁣
1 pound extra lean ground turkey⁣
2 tablespoons chili powder⁣
2 teaspoons cumin⁣
1 teaspoon dried oregano⁣
1/4 teaspoon cayenne pepper⁣
Salt and pepper to taste⁣
1 (28-ounce) can diced tomatoes⁣
1 1/4 cups reduced sodium chicken broth⁣
1 (15-ounce) can of kidney beans (drained)⁣
1 (15-ounce) can of black beans (drained)⁣
1 (15-ounce) can sweet corn (drained)⁣
1/4 cup light cream cheese⁣
For topping: cheese, avocado, crackers of choice⁣

HOW TO:⁣
1. Add olive oil, onion, garlic and red pepper to a large pot over medium heat and saute for 5-7 minutes, stirring frequently. ⁣

2. Add in ground turkey and break up the meat; cooking until no longer pink. Next add in chili powder, cumin, oregano, cayenne pepper and salt; stir for about 20 seconds.⁣

3 Next add in tomatoes, chicken broth, beans and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens. Then add your cream cheese and cook until melted. Taste and adjust seasonings as needed!⁣

This makes 5 or 6 large servings.
