No Crockpot Easy Healthy Chili
This is my go to combo when I want a chili and don’t have hours to wait for it in a crockpot.
Packed with protein & oh so yummy.
YOU’LL NEED:
2 teaspoons olive oil
1/2 a white onion, diced
3 garlic cloves, minced
1 medium red bell pepper, chopped
1 pound extra lean ground turkey
2 tablespoons chili powder
2 teaspoons cumin
1 teaspoon dried oregano
1/4 teaspoon cayenne pepper
Salt and pepper to taste
1 (28-ounce) can diced tomatoes
1 1/4 cups reduced sodium chicken broth
1 (15-ounce) can of kidney beans (drained)
1 (15-ounce) can of black beans (drained)
1 (15-ounce) can sweet corn (drained)
1/4 cup light cream cheese
For topping: cheese, avocado, crackers of choice
HOW TO:
1. Add olive oil, onion, garlic and red pepper to a large pot over medium heat and saute for 5-7 minutes, stirring frequently.
2. Add in ground turkey and break up the meat; cooking until no longer pink. Next add in chili powder, cumin, oregano, cayenne pepper and salt; stir for about 20 seconds.
3 Next add in tomatoes, chicken broth, beans and corn. Bring to a boil, then reduce heat and simmer for 30-45 minutes or until chili thickens. Then add your cream cheese and cook until melted. Taste and adjust seasonings as needed!
This makes 5 or 6 large servings.
