Green Goddess Salad
Not me hopping on the bandwagon! This viral @bakedbymelissa recipe looked too good to pass up and it DELIVERED. Delicious and so fresh tasting! Green Goddess Salad recipe is below with just a few tweaks that I made!
YOU’LL NEED:
(For the salad)
1 small head of cabbage chopped
2 cucumbers chopped
1/4 cup chives
1/2 jalapeño
(For the dressing)
1 cup of chopped basil
3/4 cup cilantro
1/4 cup chives
3 gloves of minced garlic
Juice of 1 lime
Juice of 2 lemons
1/3 cup olive oil
1/2 cup of nuts (I used walnuts)
1/3 cup of nutritional yeast
Salt and pepper to taste
Splash of rice vinegar
Drizzle of honey
HOW TO:
1. Add all salad ingredients into a large bowl.
2. Add all dressing ingredients to a food processor or blender and blend until smooth and creamy.
3. Pour dressing and combine well! Serve with your fave chips. I also added in ground turkey to make it a full dinner with protein!
