Spinach and Feta Stuffed Salmon
If you’re bored with salmon, listen up!
Spinach + Feta Stuffed Salmon is on repeat in our house and I can’t get enough. So simple, flavorful and not boring!
YOU’LL NEED:
2 salmon fillets
1 tbsp. olive oil
1 tsp. Cajun seasoning
1.5 oz light cream cheese
1/4 cup mozzarella cheese
1/4 cup feta cheese crumbles
2 oz. fresh baby spinach
HOW TO:
1. Set your oven to 400. Make the spinach stuffing by placing the cream cheese, feta, and mozzarella into a medium mixing bowl.
2. Roughly chop the baby spinach and add it to the cheese. Massage the spinach and cheese with your hands, until well combined (it should look like thick paste).
3. Using a sharp knife, cut a pocket in the center of each salmon fillet. Season the salmon with your Cajun seasoning, salt and pepper. Then brush them with olive oil on both sides.
4. Divide the spinach stuffing into two equal parts and spoon it into the salmon pockets. Bake the stuffed fillets for 15-20 minutes, depending on how large yours are!
