Lazy Mom Lasagna
This quick and simple protein packed lasagna is such an easy + delish dinner idea! This was so tasty!!
YOU’LL NEED:
1 lb lean ground turkey
2 cups marinara sauce
1.5 cups cottage cheese (no you can’t taste it)
1/4th cup shredded parmesan
Handful of spinach
1 tsp Italian seasoning
6 oven-ready lasagna noodles
1 cup light shredded mozzarella
HOW TO:
1. Cook ground turkey until browned in a large saucepan. Then add marinara sauce and set aside.
2. Preheat oven to 350. Then combine parmesan, cottage cheese, Italian seasoning and chopped spinach in a bowl.
3. Grease an 8x8 baking dish, then layer your cooked meat+ sauce, 3 horizontal lasagna noodles, then cheese mixture. Repeat layers until all meat and cheese mixtures are used.
4. Top with mozzarella and cover pan with foil. Bake for 20 minutes, then remove foil and bake for another 20-30 minutes or until lasagna noodles feel cooked and soft.
