Lemon Pesto Pasta Salad
I bought a grocery store version of this pasta and knew I had to recreate and share. It’s the perfect summer dish for a hot day.
YOU’LL NEED:
Penne noodles of choice, cooked
Handful of cherry tomatoes
Fresh mozzarella pearls
FOR DRESSING:
2 tbsp light mayo
1/4 cup lemon juice
1 zested lemon
2 tsp agave
1 tsp salt
1/4 tsp black pepper
1/4 cup fresh basil
1/2 cup olive oil
HOW TO:
1. Cook pasta and set aside to cool completely. Then add all dressing ingredients to blender or food processor and blend until completely smooth.
2. Toss cooked and cooled pasta with blended dressing. Then combine with sliced cherry tomatoes and mozzarella pearls.
3. Serve cold with a lemon and basil garnish and keep in fridge for left overs!
