Lightened Up Chicken Salad
My GO TO Chicken Salad Recipe
Eat it with a cracker, on some bread or straight out of the bowl. We won’t judge around here. This makes about 6-8 servings.
YOU’LL NEED:
3 cups cooked and shredded chicken breast
1.5 cups halved seedless black grapes
3 med celery stalks finely diced
3 tbsp diced purple onion
0.5 cup slivered almonds
1 cup plain nonfat Greek yogurt
2 tbsp light Mayo
2 tsp honey or agave
3 tbsp garlic powder
Salt, pepper to taste
HOW TO:
1. Combine all ingredients in a bowl. That’s it! Make sure it’s all evenly coated and completely mixed.
2. Refrigerate for 1-2 hours before enjoying!
