One Pan Veggie Pesto Tortellini
This is such a quick, easy and flavorful dinner you can whip up in under 30 minutes.
YOU’LL NEED:
Family size pre-made tortellini package
1/3 cup pesto
2 diced bell peppers
2 sliced zucchini
2 tbsp olive oil
1/2 cup cherry tomatoes
2 cloves minced garlic
1/2 cup mozzarella shredded cheese
Salt and pepper to taste
HOW TO:
1. Cook your tortellini according to package directions and set aside.
2. Heat a large skillet over medium heat with olive oil. Then sauté your bell peppers, cherry tomatoes and zucchini with the garlic, salt and pepper. Cook for around 5 minutes or until soft.
3. Add your tortellinis to the veggie pan and combine well. You may need to add a little more olive oil.
4. Add cheese and pesto and combine. Cook just until cheese is melted, then remove from heat. Serve! Makes about four servings.
