Chex Mix Cookies
Found these on Pinterest and had to recreate (original recipe from @cravingsbychrissyteigen). I thought about “lightening them up” but sometimes…ya just need the real deal. Make these for your holiday gatherings and thank me later!!
YOU’LL NEED:
2 cups all purpose flour
1 tsp salt
1/2 tsp baking soda
12 tbsp unsalted butter softened
3/4 cup light brown sugar packed
3/4 cup granulated sugar
2 large eggs room temperature
2 tsp pure vanilla extract
2 cups semi sweet chopped chocolate
1.5 cups turtle chex mix snack (or whatever variety you prefer)
HOW TO:
1. In a mixing bowl combine the dry ingredients (flour, salt & baking soda). Whisk and set aside.
2. In a seperate large mixing bowl, cream the butter on medium speed for 2 to 3 minutes. Scrape down the sides of the bowl, add in both sugars and continue mixing for 1 minute.
3. Add in the eggs and vanilla, just mixing until combined. Scrape down the sides of the bowl and slowly add in the dry ingredients, mixing on low speed just until combined.
4. Add the chocolate chips and chex mix to the cookie dough and slowly fold them in. Use a spoon to scoop out balls of cookie dough and place them on a baking sheet lined with parchment paper.
5. Cover with plastic wrap and place them in the refrigerator to chill for a minium of 2 hours.
6. Preheat oven to 375 degrees, then bake for 11 to 12 minutes. Top with additional Chex mix while warm!
