Chicken Bacon Ranch Pasta
Let’s be real, legit pasta is delicious and not something I’m willing to deprive myself of. But I also want to make sure I’m having well balanced meals…
So every time I am craving pasta at home, I’ll figure out a way to add greens to it. It may seem simple, but sneaking in spinach or broccoli WITH the pasta not only keeps me fuller but makes my pasta meals much more well balanced! It’s a mindset game changer.
Speaking of, I just created the easiest and yummiest Chicken Ranch Pasta Dinner using @colavitausa Rigatoni and have to share.
YOU’LL NEED:
2 cups shredded chicken, cooked
1 package dry ranch seasoning mix
8 oz @colavitausa rigatoni, uncooked
3 1/2 cups low sodium chicken broth
4 oz cream cheese, room temp
4 slices thick bacon, cooked & crumbled
2 cups cheddar cheese, shredded
1 tbsp fresh parsley, chopped
1 bag of frozen broccoli florets
HOW TO:
1. In a bowl combine shredded chicken and dry ranch seasoning.
2. To a large pot/Dutch oven over medium heat, add the chicken broth, uncooked Colavita pasta, and chicken mixture. Stir to combine and then bring to a boil. Reduce heat to low and then cover and cook for about 15 minutes. Then add your frozen broccoli and cook for another 5 minutes. There should still be some liquid in the pot when the pasta is done cooking.
3. Add the cream cheese to the pot and stir until most of the cream cheese has melted.
4. Add the bacon and shredded cheddar cheese. Stir everything until cheese is fully melted. Garnish with parsley and serve!
