Healthy Chicken Noodle Soup
An easy, cozy, one pot dinner that you can make for the whole week. This version takes about 30 minutes and makes 4 servings!
YOU’LL NEED:
1 tbsp olive oil
1 cup peeled and chopped carrots
2 ribs chopped celery
1/2 medium onion (finely diced)
2 tsps salt
1 tsp minced or powdered garlic
1 tsp dried parsley
1/4 tsp dried thyme
1/4 tsp black pepper
6 cups low or no sodium chicken broth
2 boneless skinless chicken breasts
2 cups uncooked high protein pasta
1.5 cups peas (or veggie of choice)
HOW TO:
1. Add oil to a soup pot and heat over medium-high heat. Add carrots, celery and onion and cook, stirring occasionally, until onions are translucent, about 3-4 minutes.
2. Add salt, garlic, parsley, thyme and pepper. Cook and stir 1 minute. Add broth and stir.
3. Add the chicken breasts and bring back to a simmer over medium-high heat. Reduce heat to medium-low, cover, and cook for 10 minutes until chicken is cooked through. Remove chicken breasts to shred (or pre dice them before adding if you do not want to remove).
4. Stir in peas and cook for one minute, then stir in high protein pasta and simmer 10 minutes or until al dente.
5. When noodles are cooked, stir shredded chicken back into soup (if needed) and adjust salt and pepper to taste before serving with your fave crackers!
