Lazy Enchiladas
When ya want an easy, delicious and quick dinner but you have no energy to do it…these are your best friend.
YOU’LL NEED:
2 1/2 cups cooked shredded chicken (buy pre-shredded for ease)
1 (15 ounce) can black refried beans
1 1/4 cup shredded Mexican cheese
1/2 cup shredded pepper jack cheese
10 soft corn tortillas
1 can of premade enchilada sauce
1 avocado, sliced
fresh cilantro for garnish
1/4 cup diced onion
HOW TO:
1. Preheat oven to 350. Grease a 9x13 inch pan. Begin by spreading a few spoonfuls of enchilada sauce on the bottom of your pan.
2. Warm up your tortillas in the microwave for 15 seconds, then keep a towel over them so they stay warm.
3. Assemble enchiladas by placing 2 tablespoons of refried beans in a corn tortilla, then top with a few tablespoons of shredded chicken and 1 heaping tablespoon of colby jack cheese. Roll tortillas up and place seam side down in pan. Repeat with remaining tortillas.
4. Pour remaining enchilada sauce over the top of the tortillas and sprinkle with remaining 1/2 cup of shredded colby jack and 1/2 cup of shredded pepper jack cheese, then add your onions. Bake for 25-30 minutes. Remove from oven and allow to cool for 5 minutes before serving.
5. Garnish with avocado and cilantro and serve! Makes about 10 enchiladas total. Enjoy!!
