Lazy Enchiladas

When ya want an easy, delicious and quick dinner but you have no energy to do it…these are your best friend.

YOU’LL NEED:⁣
2 1/2 cups cooked shredded chicken (buy pre-shredded for ease)⁣
1 (15 ounce) can black refried beans⁣
1 1/4 cup shredded Mexican cheese⁣
1/2 cup shredded pepper jack cheese⁣
10 soft corn tortillas⁣
1 can of premade enchilada sauce⁣
1 avocado, sliced⁣
fresh cilantro for garnish⁣
1/4 cup diced onion⁣

HOW TO:⁣
1. Preheat oven to 350. Grease a 9x13 inch pan. Begin by spreading a few spoonfuls of enchilada sauce on the bottom of your pan.⁣

2. Warm up your tortillas in the microwave for 15 seconds, then keep a towel over them so they stay warm.⁣

3. Assemble enchiladas by placing 2 tablespoons of refried beans in a corn tortilla, then top with a few tablespoons of shredded chicken and 1 heaping tablespoon of colby jack cheese. Roll tortillas up and place seam side down in pan. Repeat with remaining tortillas.⁣

4. Pour remaining enchilada sauce over the top of the tortillas and sprinkle with remaining 1/2 cup of shredded colby jack and 1/2 cup of shredded pepper jack cheese, then add your onions. Bake for 25-30 minutes. Remove from oven and allow to cool for 5 minutes before serving.⁣

5. Garnish with avocado and cilantro and serve! Makes about 10 enchiladas total. Enjoy!!
