Lemony Sausage Orzo Skillet
A quick & easy one pan, healthy meal for the whole family?! Say less! This Lemony Sausage Orzo skillet was such a hit for us. Came together so quickly & absolutely delish.
YOU’LL NEED:
1 package pre-cooked chicken sausage (sliced into rounds)
2 cups dried orzo pasta
1/2 cup thinly sliced shallot
2 tsp minced garlic
1 (12oz) package broccoli florets
3.5 cups low sodium chicken broth
1 tsp garlic powder
1 cup shaved or shredded parmesan
Juice of 1/2 lemon
HOW TO:
1. Heat 1 tsp of oil in a large skillet over medium high heat. Add chicken sausage and cook for ~2 minutes per side, until golden.
2. Add in uncooked orzo pasta, minced garlic, and shallots and stir for 1 minute, until orzo is slightly toasted. Add in broccoli florets and cook another minute.
3. Pour in broth and add salt pepper to taste + powdered garlic. Bring to a boil, then reduce heat, cover and simmer for 10-12 minutes, stirring every few minutes or so until broth is reduced, orzo cooked and broccoli soft.
4. Stir in lemon juice and parmesan until melted.
Serve and enjoy!! (Top with more Parmesan and/or red pepper flakes!)
