Taco rice

This tasty one dish meal comes together so fast (30 minutes) and with as little as 6 ingredients!! Saw this initially from @elizabethbelleeats. You’re going to love this one!


YOU’LL NEED:⁣
1 pound cooked ground beef or turkey
2 cups of uncooked minute rice (I used brown)
2 cups of low sodium beef broth
1 packet of low sodium taco seasoning
1 cup of salsa
1 cup of queso (I used blanco)
1 cup shredded cheese
Optional chopped veggies (I used 2 bell peppers)

HOW TO:⁣
1. Preheat oven to 350. While you’re browning your meat, chop veggies if you’re adding them.

2. Once ready, add your meat, uncooked minute rice, broth, salsa, veggies and taco seasoning to a greased 9x13 baking dish. Stir well to combine. Cover with lid or tin foil and bake for 30 minutes.

3. Remove from oven and immediately pour queso on top and top with shredded cheese. Put lid or foil back on and let sit for five minutes or until cheese has melted.

Serve with tortilla chips! This makes 4-6 servings depending on serving size. Sooo delicious and will be on repeat over here!!
