White Bean Kale Sausage Skillet
1 pot, under 30 minutes, really yummy and sooo easy! Adapted from OG recipe by @themodernproper
YOU’LL NEED:
1 package of cooked chicken sausage, sliced
3 minced garlic cloves
2 (15-ounce) cans of white beans
1.5 cups low sodium chicken broth
1 tsp minced fresh thyme leaves
3.5 cups kale
1 tbsp lemon juice
1/2 cup parmesan
HOW TO:
1. In a large skillet, heat olive oil over medium-high heat. Add the sausage and cook on both sides until browned. Set the sausage aside.
2. Add the garlic to the pan and cook for 15 seconds. Add 1.5 cans of the beans (save 1/2 of one can) and 1 cup of chicken broth to the skillet and season with salt, pepper and thyme. Stir to combine and bring to a simmer over medium heat.
3. In a medium bowl, smash remaining beans with a fork until a thick paste is formed. Add the smashed beans back into the skillet and stir to combine. Simmer until the beans are heated through and the broth is simmering.
4. Add the kale, reduce the heat to low and cook, stirring often until sauce becomes creamy and kale has wilted.
5. Add the parmesan, lemon and sausage to the pan. Stir to combine. Add remaining stock a little at a time if you need more creaminess.
Serve with extra parmesan cheese & red pepper flakes on top! Makes about 4 servings.
